{"id":18032,"date":"2024-09-20T13:35:55","date_gmt":"2024-09-20T16:35:55","guid":{"rendered":"https:\/\/sergiolapegue.com\/site\/?p=18032"},"modified":"2024-09-20T13:35:56","modified_gmt":"2024-09-20T16:35:56","slug":"dia-mundial-de-la-paella","status":"publish","type":"post","link":"https:\/\/sergiolapegue.com\/site\/2024\/09\/20\/dia-mundial-de-la-paella\/","title":{"rendered":"D\u00eda mundial de la paella"},"content":{"rendered":"\n<p>Acaso uno de los platos m\u00e1s buscados de la gastronom\u00eda de Espa\u00f1a, la paella tiene su d\u00eda desde hace cuatro a\u00f1os: el 20 de septiembre,&nbsp; celebraci\u00f3n del D\u00eda Mundial de la Paella.<\/p>\n\n\n\n<p>Emblema de Valencia, tambi\u00e9n conocida por las fallas, las playas mediterr\u00e1neas y la ciudad de las artes y las ciencias, en la ciudad, los valencianos comparten el plato y la elaboraci\u00f3n con otros pa\u00edses, como si fuera un mundial, para elegir al campe\u00f3n paellero. Se eligi\u00f3 septiembre porque es el mes m\u00e1s importante en el cultivo del arroz, cuando se realiza la siega (la cosecha), principal ingrediente de la paella.<\/p>\n\n\n\n<p><strong>OR\u00cdGENES DE LA PAELLA<\/strong><\/p>\n\n\n\n<p>Seg\u00fan los expertos,&nbsp; surgi\u00f3 en las zonas rurales de Valencia, entre los siglos XV y XVI, por la necesidad de los campesinos y pastores de una comida f\u00e1cil de preparar y con los ingredientes que ten\u00edan a mano en el campo. Siempre la com\u00edan por la tarde.<\/p>\n\n\n\n<p>En sus or\u00edgenes, los ingredientes eran las aves, el conejo de campo o liebre, las verduras frescas que se tuvieran al alcance, arroz, azafr\u00e1n y aceite de oliva, que se mezclaban en la paella&nbsp; (paella es el recipiente donde se la prepara, o sea la sart\u00e9n) con agua y ramas de naranjos. Todo se cocinaba a fuego lento. De hecho en sus comienzos lleg\u00f3 a estar compuesta simplemente por arroz, harina y leche de almendras. Una receta que poco a poco fue enriqueci\u00e9ndose, a\u00f1adiendo otro tipo de ingredientes de los que dispon\u00edan los campesinos, todo por supuesto cocinado a fuego lento y con le\u00f1a, concretamente con madera de naranjo.<\/p>\n\n\n\n<p>Una teor\u00eda rom\u00e1ntica cuenta que, un hombre prepar\u00f3 paella para su novia para ganar su cari\u00f1o. En espa\u00f1ol, paella puede ser una derivaci\u00f3n de la frase \u201cpor ella\u201d o \u201cpara ella\u201d. (45 cc)<\/em><\/p>\n\n\n\n<p><em>Cebolla 2 unidades (240 g)<\/em><\/p>\n\n\n\n<p><em>Ajo 2 dientes (10 g)<\/em><\/p>\n\n\n\n<p><em>Pimiento verde \u00bd unidad (45 g)<\/em><\/p>\n\n\n\n<p><em>Pimiento rojo \u00bd unidad (45 g)<\/em><\/p>\n\n\n\n<p><em>Calamares 300 g.<\/em><\/p>\n\n\n\n<p><em>Vino blanco \u00bd taza (125 cc)<\/em><\/p>\n\n\n\n<p><em>Tomate 2 unidades<\/em><\/p>\n\n\n\n<p><em>Arroz grano medio 4 tazas (280 g)<\/em><\/p>\n\n\n\n<p><em>Caldo de verdura 1 taza<\/em><\/p>\n\n\n\n<p><em>Azafr\u00e1n 1 c\u00e1psula<\/em><\/p>\n\n\n\n<p><em>Agua 10 tacitas<\/em><\/p>\n\n\n\n<p><em>Mejillones 200 g.<\/em><\/p>\n\n\n\n<p><em>Almejas 200 g.<\/em><\/p>\n\n\n\n<p><em>Camarones 150 g.<\/em><\/p>\n\n\n\n<p><em>Vieiras 150 g.<\/em><\/p>\n\n\n\n<p><em>Berberechos 150 g.<\/em><\/p>\n\n\n\n<p><em>Langostinos 8 unidades (80 g)<\/em><\/p>\n\n\n\n<p><em>Para decorar:<\/em><\/p>\n\n\n\n<p><em>Arvejas 150 g.<\/em><\/p>\n\n\n\n<p><em>Pimiento rojo asado o en lata 1 unidad (90 g)<\/em><\/p>\n\n\n\n<p><em>Perejil fresco 1 paquete<\/em><\/p>\n\n\n\n<p><em>Aj\u00ed molido \u00bd cda.<\/em><\/p>\n\n\n\n<p><em>Lim\u00f3n 1 unidad<\/em><\/p>\n\n\n\n<p><em>Para empezar, picar la cebolla, el ajo y los pimientos en cubitos bien peque\u00f1os. Cocinarlos en un recipiente de 40 cm de di\u00e1metro aproximadamente con un poquito de aceite hasta lograr que las verduras tomen color, unos 10 minutos m\u00e1s o menos.<\/em><em><br><\/em><em>Cortar los calamares en de 1 cm de espesor y a\u00f1adirlos a la paella, cocinarlos por unos 5 minutos. Agregar el vino y el tomate en cubos previamente pelados y sin semillas.<\/em><em><br><\/em><em>Cocinar todo a fuego bajo por unos 20 minutos y reci\u00e9n pasado ese tiempo, agregar el arroz. Junto al arroz incorporar el Caldo de Verduras y el Azafr\u00e1n (antes de incorporar el caldo y el azafr\u00e1n diluirlos en agua para que se integren de manera pareja en la preparaci\u00f3n).<\/em><em><br><\/em><em>Mezclar todo con ayuda de una cuchara de madera, dejar de mezclar y cocinar todo 10 minutos. Pasados los 10 minutos incorporar los mariscos y cocinar por 5 minutos m\u00e1s. No mover&nbsp; el arroz una vez vertido el caldo o se romper\u00e1 el sabor. El tiempo exacto para que no se queme. El hierro para el socarrat es tan importante como el fuego para la cocci\u00f3n.<\/em><\/p>\n\n\n\n<p><strong><em>Samuel Luque due\u00f1o y chef del Casal de Catalu\u00f1a, fue buscando en Buenos Aires donde comer la mejor paella y como no encontr\u00f3 una que lo convenciera del todo decidi\u00f3 hacerla \u00e9l mismo. Por eso toma las riendas del Casal.
